The Chemex Guide: Mastering the Clarity of 'Rhythm'

The Chemex Guide: Mastering the Clarity of 'Rhythm'

The Chemex is the ultimate vessel for our Rhythm blend. Because of its thick paper filter, it strips away oils and sediment, leaving you with a cup that highlights the high-altitude brightness of Ethiopia and the structural sweetness of Colombia.

Chemex // Morning Routine

The Chemex will help transport you back to the moment and intention of the morning coffee. Consistent in design, crisp in extraction, and enough to enjoy a second cup.

THE ONDULANDO BREW GUIDE

• RATIO // 1:15 [ 30g coffee : 450g water ]

• GRIND // Medium

• WATER TEMP // 205°F

1. The Rinse: Place your filter (triple-fold facing the spout) and rinse with hot water. This removes the "papery" taste and warms the glass.

2. The Bloom: Add your grounds and pour 60g of water. Wait 45 seconds. You'll see the coffee "bloom" as CO2 escapes—this is the sign of a fresh Saturday Session roast.

3. The Rhythm: Pour in slow, concentric circles. Avoid hitting the sides of the filter. Stay in the flow until you reached 270 grams.

4. The Flow: Keep the pouring going by stopping the circles and pouring right in the middle. This is where we finish off the brew by reaching our goal 450 grams.

5. The Draw Down: Your total brew time should land between 4:00 and 5:00 minutes. If it's too fast, grind finer; too slow, grind coarser.
